Is it possible to maintain healthy eating over the Holidays?
Jamaican Spice Chicken
Ingredients:
1 half chicken fryers
1 large green apple
Fresh- Sea salt or kosher salt, whole ginger, clove, cinnamon, allspice,
& peppercorns
1 lemon zest
2 limes
Method:
Blend all the spices in a coffee grinder and sprinkle over chicken, grate ginger and lemon zest on chicken, dice the apples. Now place the chicken and apples in a baking pan cover with foil and bake at 400 degrees for one and a half hours.
Coconut Rice
Ingredients:
1 cup of jasmine rice
2 cups of water
1 half fresh coconut
1/4 cup dried cranberries
Method:
Place rice and water in sauce pan bring to a boil and let simmer for 15 minutes covered. Then stir in cranberries and grate fresh coconut into rice, mix and serve.
Ginger Carrots & Sweet Pepper
Ingredients:
1 cup peeled carrots sliced on bias
1/2 cup of roasted peppers chopped
Fresh ginger to your liking
Method:
Braise the carrots in water, once cooked add the roasted peppers and grate in ginger to taste

PROGRAM OF THE MONTH
Leprechaun
Leap 5k
Join us in the month of February as we train for the Leprechaun Leap 5k Race. This fun event takes place on March 17th at The District at Tustin Legacy. This competitive run will also feature team divisions. This dog friendly event will be followed by a party and beer gardens. Those interested are asked to go online at http://leprechaunleap.org/ and sign up under OFAC Muddy Buddies ( cost $33 ).
OFAC members can join us free as we train for this event! Our first training will be on Saturday Feb 4th. We will meet up across from Kaylani's Coffee House in North Beach at 9:00AM. We will train and run as a team! Since it is St. Patrick's day, be sure to wear green and prepare for a party!
This will be the first of many training events with Outdoor Fitness Adventure Club. We really want to know what events you are interested in training for. We have changed our EPIC solution so you do not have to register for access. Just go to ofac.myepicfitness.com and click continue for access to the EPIC solution. When you find an event you would like to train for just go on our OFAC facebook site at www.facebook.com/ofaclub and tell us what EPIC event you would like to attend.
OFAC will form teams and create training programs for your next adventure. Think of it, instead of focusing on that last 5 pounds, we can have fun training for an adventure. Of course you will lose the weight, but you will gain so much more in the process. So, wether it is a fun 5k you have always wanted to accomplish, or perhaps you have always wanted to bag that peak, OFAC is your adventure solution. We are here to help you cross the finish line or stand on that peak.
