Gluten-Free Pizza

 

Ingredients:
  • Rice flour for dusting hands and rolling
  • 1 375g (13.2-oz.) package gluten-free pizza dough mix
  • 1 tablespoon olive oil
  • 2 tablespoons diced red onion
  • 1/8 teaspoon salt
  • 1 1/2 cups canned tomato puree
  • 1/4 teaspoon sugar
  • 1/2 teaspoon dried oregano
  • Pinch of pepper
  • 8 ounces mozzarella, shredded
  • 2 small bell peppers, 1 red and 1 green, seeded and sliced
  • 1/2 cup pitted black olives, halved
  • 10 fresh basil leaves

Directions           

  • 1. Preheat oven to 425�F; prepare dough as package label directs.
  • 2. Warm oil in a medium pan over medium-high heat. Add onion and salt; saut� until onion has softened, about 3 minutes. Reduce heat to low; stir in tomato puree, sugar, oregano and pepper. Simmer for 10 minutes.
  • 3. Mist 2 pizza pans or round baking sheets with gluten-free cooking spray. Divide dough in half; spread on pans. Pour sauce over each, leaving 1/2-inch border. Sprinkle with mozzarella. Try arranging pepper slices in a pinwheel pattern. Place olive halves between pepper slices. Bake for 15 to 18 minutes (or as package label directs), until crust is light golden and cheese has melted. Allow to cool for 5 minutes. Top with basil leaves just before serving.

PROGRAM OF THE MONTH

Graphic Crusher TeeLeprechaun Leap 5k

Join us in the month of February as we train for the Leprechaun Leap 5k Race. This fun event takes place on March 17th at The District at Tustin Legacy. This competitive run will also feature team divisions. This dog friendly event will be followed by a party and beer gardens. Those interested are asked to go online at http://leprechaunleap.org/ and sign up under OFAC Muddy Buddies ( cost $33 ).

OFAC members can join us free as we train for this event! Our first training will be on Saturday Feb 4th. We will meet up across from Kaylani's Coffee House in North Beach at 9:00AM. We will train and run as a team! Since it is St. Patrick's day, be sure to wear green and prepare for a party!

This will be the first of many training events with Outdoor Fitness Adventure Club. We really want to know what events you are interested in training for. When you find an event you would like to train for just go on our OFAC facebook site at www.facebook.com/ofaclub and tell us what EPIC event you would like to attend.

OFAC will form teams and create training programs for your next adventure. Think of it, instead of focusing on that last 5 pounds, we can have fun training for an adventure. Of course you will lose the weight, but you will gain so much more in the process. So, wether it is a fun 5k you have always wanted to accomplish, or perhaps you have always wanted to bag that peak, OFAC is your adventure solution. We are here to help you cross the finish line or stand on that peak.
